Swanky Anatolian restaurant RÜYA at St. Regis Dubai, The Palm is located on the third floor of the hotel and promises authentic and contemporary Anatolian cuisine in a lively, yet modern and relaxed setting. RÜYA, which means dream in Turkish does live up to its name by creating a dreamy dining space with a theatrical open kitchen, a dessert station, an indoor bar and an outdoor bar. Rüya Dubai’s head chef, Gökhan Cokelez, who hails from the Anatolian region features dishes like the isli patlican, an aubergine and walnut puree, and crispy coated aubergine chips. For meze, there’s the levrek, which is a thinly sliced raw seabass, mustard, apple, and shaved radish. Also try the courgette dolma with wild mushroom ragout, fennel, and oregano and Adana kebap, a hand-cut lamb dish with burnt tomato.
